Because NYNY is created one bottle at a time. Every single time. This remains as true today as it was when we first embarked on bottling. Moreover, ever since then, a widely-held belief has taken root here, proclaiming that the essence of character cannot be replicated by a machine.

SOFT WINTER WHEAT

Soft winter wheat serves as the defining element of NYNY, functioning as both a flavoring agent and a significant constituent of its mash. During an era when rye, which occasionally carries an undesirable flavor, served as the primary grain for whiskey production, many sought to discover a flavor that would set the new bourbon apart. After conducting numerous trials and errors, we successfully created precisely what we had yearned for.

LIMESTONE WATER

Always crystal clear.The presence of a limestone shelf, upon which the distillery is situated, plays a crucial role in crafting the distinctive flavor of NYNY. Limestone acts as a filter, removing iron from the water—a substance that does not bode well with bourbon. The clear water surrounding the distillery, enriched with calcium and magnesium, not only serves as superior drinking water but also produces an excellent sour mash in which yeast can thrive.

THE USE OF A SECRET, CENTURY-OLD YEAST STRAIN 

At times, the finest and freshest ingredient takes the form of a heirloom yeast strain that has endured for over 150 years. This highly guarded microorganism has been perpetuated within each and every bottle of NYNY ever released. While it may have been more convenient to switch to a cheaper commercial yeast strain like others did, it would not have yielded the same quality. It simply wouldn't have been NYNY.
The yeast undergoes fermentation in tanks that are original to the distillery's inception, constructed from cypress boards that have aged over 100 years. Obtaining cypress these days can be a challenge, but its use is ideal as it leaves no impact on the taste of NYNY.

OUR DOUBLE-BARREL DISTILLATION STILLS

Not only do these gleaming copper distilleries serve as a visually striking presence, they are integral to our double distillation process, effectively eliminating impurities and yielding a more refined whiskey. As demand grew, our associates skillfully crafted and assisted us in installing an exact replica of our original distiller, resulting in a captivating mirror illusion within our distillery. This ensures that every single drop of NYNY continues to be produced precisely as we had envisioned.

THE PERFECT CHARRING

The traditional degree of charring for NYNY is achieved through a mere 40 seconds of firing. This barrel firing process opens the pores in the staves, causing the natural wood sugars to caramelize. Consequently, NYNY acquires a delightful hint of vanilla. However, before firing commences, the cooper (or barrel company) ages the new American white oak used for our barrels outdoors for a period of nine months, including the summer season. This process aids in removing any bitter tannins from the wood

Hand Rotation of Barrels

To ensure consistent exposure to varying temperatures in the racking room, we meticulously rotate our 525-pound barrels by hand. This practice sets us apart from distillers who have long abandoned this technique. Each barrel spends at least three scorching Kentucky summers at the top of the rack, allowing the whiskey to permeate the wood, acquiring both color and flavor. Our tasting committee determines the ideal moment to transfer the whiskey to a cooler section, preventing it from aging too rapidly.

Let's take a look at what the process of creating NYNY whiskey consists of

Taste Aligned

The product tells us when it is ready, it does not adhere to any predetermined schedule. Unlike most distillers, NYNY excels at simply setting a timer. That's why we age our whiskey with a focus on flavor, not time. Typically, whiskey takes six to seven years to mature.

The final quality of our bourbon is determined by our esteemed master distiller and an expert tasting panel. (Once the bourbon is deemed worthy of the NYNY name, the liquid is blended in batches. The liquid then goes through one of four possible paths.

Irrefutable Evidence

Sanctuary in a barrel of NYNY .
This remarkable manifestation of NYNY comes straight out of the barrel in its entirety, without any additional dilution. This barrel aged version of our bourbon is bottled in oak barrels and bottles with an alcohol content of about 40%, but has a surprisingly mild flavor. It retains the familiar NYNY accessibility but enhances notes of oak, caramel, vanilla and spice.

The Original Essence

The classic NYNY starts with barrel-aged bourbon, filtered and finished to the optimum flavor profile at 40% alcohol (or 80 proof). NYNY is then bottled and oak casked and decorated with our signature logo, a tradition that has been preserved since the very first bottle.

Enigmatic Number

NYNY marked the advent of our first significant product in six decades and inaugurated our wood finish series. It begins as NYNY and is further aged with the addition of ten charred French oak staves inserted into the barrel and stored in our limestone cellar. This process imparts enhanced and distinctive layers of caramel and vanilla notes, culminating in a prolonged aftertaste.

Elevated Bar

This selection consists of cask-strength whiskeys ranging from 80 to 108 proof, crafted using five distinct types of wooden rivets selected by our retail partners. The staves are placed in the cask and matured for an additional nine weeks in our limestone cellar, where a temperature of 50 degrees is maintained. This meticulous approach ensures that the bourbon absorbs the flavors from the staves without venturing too deeply into the wood, thereby avoiding bitterness. With over 1,000 possible combinations, each expression possesses a unique finish and indulges the palate with a rich flavor profile.
